Salpimentar y cocer por el lado de la grasa en una sart\u00e9n sin aceite durante 8 min. Dar la vuelta y cocer 4 min. Retirar y guardar el jugo.<\/p>\n<p>Mientras tanto deshacer la mantequilla en una sart\u00e9n, a\u00f1adir el az\u00facar y unos dados de pera, pelada y cortada previamente. Una vez dorada a\u00f1adir un poco de cava. Dejar cocer a fuego lento y retirar.<\/p>\n<p>Recuperamos el jugo de los magrets, retirando el exceso de grasa, a\u00f1adiendo el resto de cava y el caldo.
