{"id":7990,"date":"2019-04-05T20:48:12","date_gmt":"2019-04-05T19:48:12","guid":{"rendered":"https:\/\/avinova.cat\/perdiz-estofada\/"},"modified":"2019-04-05T20:48:12","modified_gmt":"2019-04-05T19:48:12","slug":"perdiz-estofada","status":"publish","type":"post","link":"https:\/\/avinova.cat\/es\/perdiz-estofada\/","title":{"rendered":"Perdiz estofada"},"content":{"rendered":"<p><strong>Ingredientes:<\/strong><\/p>\n<p>2 perdices salvajes de caza<br \/>\n2 tazas de caf\u00e9 con aceite de oliva<br \/>\n1 taza de caf\u00e9 con vinagre de Jerez<br \/>\n1 taza de caf\u00e9 con Jerez<br \/>\n2 zanahorias medianas<br \/>\n2 cebollas grandes<br \/>\n1 puerro peque\u00f1o<br \/>\n1 cabeza de ajos<br \/>\n15 granos de pimienta negra<br \/>\n1 hatillo de hierbas arom\u00e1ticas<\/p>\n<p><strong>Elaboraci\u00f3n:<\/strong><\/p>\n<p>Limpiamos las perdices y las salpimentamos por dentro y por fuera.<br \/>\nCortar las cebollas, las zanahorias, el puerro y a\u00f1adirlas a las perdices junto con el vinagre, el aceite, el jerez, las hierbas arom\u00e1ticas, los granos de pimienta y los ajos aplastados con la piel. Dejamos el conjunto en la nevera durante 12h con la pechuga para abajo para que esta parte de la perdiz quede tierna y m\u00e1s jugosa.<\/p>\n<p>Pasado un tiempo lo ponemos todo en una cazuela a cocer a fuego lento durante 2 h.
