Dejar en adobo durante 12h.<br \/>\nRetirar la carne del venado con la hoja de laurel.<br \/>\nCocer el adobo a fuego suave hasta que se reduzca a la mitad. Se cuela y se reserva.<br \/>\nSecar la carne, salpimentar y enharinar y saltear con aceite en una cazuela. Cuando empiece a dorarse ir rociando con el adobo y dejar cocer unos 20 minutos. A\u00f1adir la cerveza negra e introducir la cazuela en el horno caliente y cocer 30min aproximadamente a temperatura baja.
