{"id":8003,"date":"2019-04-05T21:36:20","date_gmt":"2019-04-05T20:36:20","guid":{"rendered":"https:\/\/avinova.cat\/pularda-de-medio-duelo\/"},"modified":"2019-04-05T21:36:20","modified_gmt":"2019-04-05T20:36:20","slug":"pularda-de-medio-duelo","status":"publish","type":"post","link":"https:\/\/avinova.cat\/es\/pularda-de-medio-duelo\/","title":{"rendered":"Pularda de medio duelo"},"content":{"rendered":"<p><strong>Ingredientes:<\/strong><\/p>\n<p>1 pularda 2,5Kg aprox.<\/p>\n<p>200g de trufas<\/p>\n<p>200g de foie gras<\/p>\n<p>10cl de caldo de trufa<\/p>\n<p>\u00bc l de caldo de gallina<\/p>\n<p>\u00bc l de nata l\u00edquida<\/p>\n<p>200g de mantequilla<\/p>\n<p>Manteca de cerdo<\/p>\n<p>Sal y pimienta<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Elaboraci\u00f3n:<\/strong><\/p>\n<p>Limpiar la pularda y entre carne y piel laminar el foie y una parte de la trufa.<\/p>\n<p>Salpimentar, untar con la manteca y meter en una cazuela al horno a 160\u00ba durante 2h o 2:30h boca abajo las 2\/3 partes del tiempo. Despu\u00e9s girarla. Mejor tenerla tapada con papel de horno o de aluminio h\u00famedo en agua (que no se pegue) hasta el \u00faltimo momento para que se dore.<\/p>\n<p>Aparte, preparamos la salsa. Reducimos el caldo de gallina y a\u00f1adimos la nata l\u00edquida. Emulsionar con trocitos de mantequilla y lo hacemos hervir. Al espesarse se le a\u00f1adir\u00e1 el caldo de trufa y el resto de la trufa laminada.
